My mother has always said that some of her favorite recipes have been found on the back of a box of broth, a box of rice, box of pasta, etc. These recipes tend to also be relatively simple. I’ve followed her lead and made several recipes that I’ve discovered hidden on the back of packaging, and so far, she’s been right! One recipe that I found a few months ago has quickly become a weeknight staple in our house. No joke, we eat this 1-2 nights per week. It could not be easier, and I almost always have all the ingredients on hand. Oh, and it’s super healthy, so win win win win, right?!
Grey Poupon Classic Chicken Dijon
- 2 Tbsp Grey Poupon Dijon Mustard (the smooth kind, not the grainy stuff)
- 1 Tbsp water
- 1/2 tsp garlic powder
- 1/2 tsp dried Italian seasoning
- 1 lb boneless skinless chicken breasts (I buy the thinly sliced breasts)
Heat oven to 375.
Mix mustard, water and seasonings
Place chicken in a shallow pan and brush with mustard mixture
Bake 20 minutes or until chicken is done
This chicken goes wonderfully with roasted vegetables (asparagus or zucchini are my faves) or also works on top of a green salad. Is it dinnertime yet? This mama is starving (as per usual).
